Abstract
THE MEAT AND MEAT DİSHES IN COLLECTED POEMS IN 17TH CENTURY
In 17th century, the Ottoman emperor had started period of stagnation which was not affected to literature. The Classical Turkish Literature had preserved to meaning eloquently, precious and powerful pen poets had continued to educate at this time. In the preparation of this study , in the 17th century meat and meat dishes of ottoman cuisine had made firm with guidance of 17th century Divan literature poets who are ‘Azmî-zâde Hâletî, Fehîm-i Kadîm, Hevâyî, Nâbî, Nâ?ilî-i Kadîm, Nef?î, Neşâtî, Cevrî, Sâbit ve Şeyhülislâm. In the identified elements or items, sort of rich dishes had formed with subheadings. The dishes are given with subheadings as classified couplet, poem and couplet number. Firstly, the dishes had expressed with descriptions, properties, cooking types, the situation of culinary culture, and the best reflection work is Seyahatname of Evliyâ Çelebi, which is primary work with social life and material culture of 17th century, had expressed with assets; after, in the direction of example couplet meanings had explained with using divan poets. As a result of this study, the dishes were not only used with real meaning but also metaphorical meaning and various similes.
